APPLE AND SPICE DREAM CAKE
From Barbara W., Cleveland, TN
1 BOX SPICE CAKE MIX
3 EGGS
1/4 CUP VEGETABLE OIL
1 20 OZ. CAN OF APPLE PIE FILLING
1 CUP RAISINS (OPTIONAL)
1 CUP WALNUTS OR PECANS
Heat oven to 350 degrees. Grease and flour a 10 cup tube or Bundt pan, or 9x13 pan.
In large bowl blend the cake mix, eggs, and oil until just moistened. Increase to high speed and beat 2 minutes. Stir in apple pie filling by hand. Stir in raisins and nuts. Pour into prepared pan.
Bake in a tube pan for 50-60 minutes (For the 9x13 inch pan, bake 40-45 minutes.) and cool upright in the pan for 25 minutes before inverting onto wire rack.
Serve with a dollop of whip cream.
Makes 16 sevings.
*This cake is incredibly easy and so, so good. It is certainly a keeper.
APPLE PECAN CAKE

1 c butter
2 c sugar
3 eggs
2 tsp vanilla
3 c flour
1 1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmet
3 Granny Smith Apples, peeled and chopped
(approx. 3 c)
2 c chopped pecans
Grease 10" tube or bundt pan. Dust the inside with a little white sugar and cinnamon to "flour" it. Cream the butter, add the sugar and cream well. Add the eggs and continue to cream until light and fluffy. Add the vanilla. Combine the flour, baking soda and spices. Mix the dry ingredients into the creamed mixture. Fold in the apples. Scoop the batter into the greased and "floured" pan and smooth the top.
Bake 325 degrees for 80-90 minutes or until tooth pick comes out clean. Let stand in the pan for 15 minutes and then turn out on cooling rack. When completely cool, dust with powdered sugar or drizzle with powdered sugar glaze. Hearty cake freezes well.
ADAM AND EVE TORTE
From Judy R. This recipe has been in her family for 30 years, and is a family favorite
1/4 c butter
1 cup sugar
1 egg
1 cup flour
1 t soda
1/4 t nutmeg
1/4 t cinnamon
2 cups chopped apples
1/4 cup chopped pecans
Combine and pour into 7x12 pan
Bake 40 minutes at 350
1/2 cup brown sugar
1/4 c granulated sugar
1/2 cup half and half cream
1/2 cup butter
1/2 t vanilla
Combine and simmer 5 minutes. Serve warm over cake topped with vanilla ice
cream.
